After nearly 5 years at the iconic River Cafe, then roles as Head Chef at Storico (New York), Goldeneye (Jamaica) and at the Fife Arms (Braemar), Chef Tim Kensett offers a unique, off-grid dining experience with a set menu composed of the freshest, most local, most seasonal, most ethically sourced ingredients we can find. The emphasis is on the wild and on preserving the seasons, and much of the produce comes from our gardens, farm, and hills. “The food is inherently simple with a focus on not trying to over- complicate flavours. With access to wild vegetables, herbs, and flowers at their peak, my job as a cook is really to highlight and enhance their natural qualities. It is all that is needed.” The 8-course tasting menu is cooked over an open fire and served overlooking Loch Nell, surrounded by scenic Highland beauty.
